We have several process’s that do not require live assist and we are having trouble if users activate the live assist. Is there any way to turn it off for a single recording?

Unfortunately, in classic you cannot disable the assist per recording.
In attain you can.

To accomplish this you will need at least two templates, one with the assist enabled, and one without.
Then, using the structure editor, you can assign the right template to the right recordings.
