Would it be possible to exclude a particular recording from the Virtual Assistant list, while keeping it in the portal (Document and Video)?

Sure. In the editor of the recording, you can mark up all steps and right-click, then in the context menu you choose inclusion options…
Choose to Un-choose the Assist material.
