Can you disable the voice over in the recordings and can you remove the text at the bottom of the videos?

Hi,
yes, both narration and subtitles can be disabled - either per step, or by template thereby affecting all recordings with that template defined.

You can disable the subtitles on the following Entity types, located down in the Publishing template:
Entity: Show-me video, Try Me video & Test Me video. Select the Playback from the navigation menu on the right side then put a check in the box under the No subtitles section. Save changes and move to the next entity video and do the same thing there.
