My LMS requires individual SCORM files. Essentially, I have Topic A with 7 recordings and Topic B with 8 recordings. How can I get two separate SCORM packages?

If SCORM is enabled in your template, then every time you create a structure and publish it, it will create a SCORM file for download. To achieve to separate SCORM files, create structure with content for Topic A, and publish and download. Then modify structure to suit Topic B, and repeat.
If your work requires extensive changes to both SCORM packages, I would recommend creating separate ClickLearn projects for each SCORM package.
