I have created two eLearning projects for specific training that contains modules/lessons created by different SME’s and I would like to set the voice gender according to the SME’s gender. Can I select a different voice for each lesson? Or is it only per project? Please help!

This can be done, yes.
In order to accomplish this, you just need to create two templates, one with each voice setting - and then apply the template to the applicable recordings in your structure.
This is where you modify the voice for each template individually:
Once you have those two templates in place, you can apply them to the recordings in the structure editor:
